After receiving the COVID vaccine, she began to experience symptoms of Mast Cell Activation Syndrome (MCAS), Postural Orthostatic Tachycardia Syndrome (POTS), Lyme Disease, and palpitations. As she navigated this new reality, she had to rethink her approach to food and find ways to manage her symptoms. She discovered that she had to avoid common allergens like gluten, which led her to experiment with new recipes and ingredients.
As she spent more time in the kitchen, Mary Beth found that baking brought her a sense of comfort and joy. She enjoyed the process of creating something delicious and safe for herself to eat, and she was happy to share her treats with friends and family. As she continued to bake and experiment with new recipes, she realized that she could use her passion to help others who may be struggling with similar dietary restrictions.
